    This savory cheddar dutch baby topped with golden mushrooms and wilted pea greens makes an easy weeknight meal or weekend brunch. Vegetarian and gluten-free.

    I've worked in kitchens since I was in high school. I waited tables through college. And my first job post-graduation was in a gluten-free wholesale bakery. I've never held an office job, never owned anything suit-like, just a chef's coat. I always thought that cooking seemed extremely glamorous. But it really wasn't. I read Kitchen Confidential when I first moved to San Francisco in the early 2000's and it helped me to see the restaurant world with open eyes.

    Mushrooms

    I never really fit into restaurants. I'm too slow, too sensitive. I dreamed of having a job where my technical proficiency wasn't measured by my speed. I thought cooking would be creative, but even as a pastry chef I was really just making the same things over and over again. It felt like manual labor. The pay was slightly above minimum wage and there were no tips, no benefits. Being a pastry chef had been my goal since I was little, but once I'd arrived, I realized there was no place else to go. I didn't have the drive to manage a larger team or join a union. The only way up was out.

    Kitchen Confidential made me want to write my own memoir about the restaurant world. But I wanted to write it in my favorite genre – romantic comedy chick lit. This lead me to a writing class where the teacher suggested I start a blog about food and writing. I was only barely employed, working about 20 hours a week at a dysfunctional kitchen where the doors of the oven and refrigerators would literally fall off in my hands, the chef wanted me to conjure desserts out of the air rather than purchase ingredients, and one coworker would regularly place his hand on my belly and say "My baby in there." I couldn't find anything better. This was during the 2008 recession, so I felt lucky to have any work at all.

    I did start a blog, naming it after a term that Jay and I kicked around a bunch: Bojon – no job, backwards. It's lead to many great things. I have much to thank Anthony Bourdain for.

    Bourdain had a special disdain for vegetarians, as did my coworkers at the aforementioned restaurant (I made them pasta with pesto and broccoli for lunch once and they refused to touch it). But I like to think that hearty dishes like this mushroom cheddar dutch baby can be a good gateway food for even the most rabid carnivores. I whipped it up with ingredients leftover from this quiche, so it's full of some of the same ingredients – good dairy and eggs from Organic Valley, and a medley of mushrooms cooked up in ghee, white wine, shallots, and herbs.

    The batter comes together quickly in a blender and it bakes into a puff of eggy, cheesy goodness in the heat of the oven, crispy on the outside with a custardy interior. Add the mushrooms and some wilted greens, and you have yourself a protein-packed vegetarian and gluten-free meal.

    Mushroom Cheddar Dutch Baby {gluten-free}

    Cheesy, savory, gluten-free goodness that works for dinner or brunch.
    Prep Time: 15 minutes
    Cook Time: 20 minutes
    Total: 35 minutes
    Servings: 4 servings

    Ingredients

    Dutch Baby:

    • 4 large eggs
    • 1 cup (235 ml) whole milk
    • 1/4 cup

      (35 g) sweet white rice flour
(such as Mochiko)

    • 1/4 cup

      (30 g) millet flour
(such as Bob’s Red Mill)

    • 1/4 cup (25 g) GF oat flour (such as Bob’s Red Mill)
    • ½ teaspoon fine sea salt
    • a few turns freshly ground black pepper
    • 1 cup (3 ½ ounces / 100 g) lightly packed grated sharp or extra-sharp cheddar cheese
    • 1 ½ tablespoons (22 ml) ghee (or butter)

    Topping:

    • 1 ½ tablespoons (22 ml) ghee (or butter)
    • 1 small shallot, peeled and diced
    • 8 ounces (225 g) mushrooms (I used a combination of king oyster, maitake, shiitake), cut into pretty pieces
    • 4 tablespoons (60 ml) white wine, rosé, or vegetable broth
    • a few pinches salt
    • 1 cup lightly packed pea greens or arugula
    • 2 tablespoons snipped chives
    • a squeeze of lemon juice
    • freshly ground black pepper

    Instructions

    • Position a rack in the center of the oven and preheat to 425ºF. Have ready a heat-proof 9- or 10-inch skillet.
    • In the bowl of a blender, combine the eggs, milk, sweet rice, millet, and oat flours, salt, and pepper. Blend on medium-low until smooth, then add the cheese and pulse once or twice just to combine.
    • Heat the skillet in the oven for 5 minutes. Remove and add the ghee, coating only the bottom of the pan (leaving the sides ungreased will help the batter rise up the sides of the pan). Pour the batter into the hot pan and bake until puffed and golden, 20-25 minutes.
    • While the dutch baby bakes, heat the ghee in a wide skillet over medium heat. Add the shallot and cook, stirring occasionally, until softened, 3 minutes. Add the mushrooms, salt, and pepper and cook, stirring occasionally, until golden and tender, adding the wine bit by bit if the pan looks dry, about 10 - 15 minutes. Toss in the pea greens to wilt, 2-3 minutes, then finish with chives, lemon, and pepper.

    Notes

    Variation: Sweet Dutch Baby
    Omit the cheese and pepper from the batter, adding the zest from ½ medium lemon and 1 tablespoon sugar. Bake as directed, topping with whatever you like (chia jam, fresh fruit, and greek yogurt are my personal favorites!)
     
    I prefer using ghee as the fat to cook both the mushrooms and the dutch baby due to its high smoke point and rich flavor, but feel free to swap in regular butter if you don't have any on hand; just keep an eye on it to prevent burning.
    I photographed this dutch baby with fresh pea greens, but they are tastier wilted in with the mushrooms as per the directions.
    Pea greens can be found at farmers markets in the spring, but arugula makes a perfect stand-in if none are available.
    The dutch baby base is adapted from the Apple Buckwheat Gruyere Puff Pancake in my book Alternative Baker.
    Leave the cheese out and it makes a dutchy that can swing sweet or savory.

      I didn't know much about Bourdain until I started watching Parts Unknown some years ago. I realize that I still don't know much about him, but I will truly miss him. He was a part of my life through his TV show. He made me travel more and eat more.
      On another note, this is exactly what I want to eat right now, and I might just make it! Gorgeous!

      This has become a Fall favorite and one of my friends now makes it regularly as well! It’s one of the best savory Dutchy recipes I’ve used. I also love your writing and this piece is no exception. I was gutted by loss of Bourdain but am grateful for sharing the planet with him for the time he chose to stay here.

I don't remember tasting rhubarb until I moved from the LA area up to Northern California for college. There I fell in love with the tart stalks. Luckily for me, I also fell in love with a guy who's mom grows loads of rhubarb in her yard! We went to visit last weekend and came home with bags full of rhubarb and plump Meyer lemons from Mary's abundant garden. Just the ingredients needed to make this cake!

This GF rhubarb cake tastes like spring on a plate: redolent with the flavors of almond, olive oil, bright citrus, and tangy rhubarb. It looks deceptively fancy, with slices of pink-hued stalks arranged in concentric circles. But don't be fooled: the batter comes together with just a bowl and a whisk in a matter of minutes.

If you don't have any rhubarb on hand, don't fret: swap in other fruit such as fresh or frozen berries, cherries, peaches, or anything else you like.

This recipe uses the GF flours almond, oat, sweet rice, and millet. I’ve also tested a grain-free version with almond, cassava, and tapioca flours that works beautifully. Make it DF by using plant yogurt.

These are easy to whip up even when you’re still half asleep, no whipping or folding required. They taste like little pillows of sweet, cheesy goodness.

This easy little loaf gets a baklava vibe from sticky dates, toasted nuts, cinnamon, and a drizzle of honey if you like. It’s free of grains, dairy, eggs, cane sugar, and can be made nut-free too. I use cassava, almond, and tapioca flours for a sturdy, tender crumb, but I’ve given substitution suggestions in the recipe. If you’ve got a couple of ripe bananas lying around, this is the recipe for you! 

Ingredients:
•nut or seed butter
•maple syrup and/or coconut sugar
•coconut oil or ghee
•plant milk
•flours
•baking powder and soda
•cinnamon
•vanilla
•salt
•toasted walnuts
•dates

Adapted from the chocolate-flecked paleo vegan banana bread recipe I posted last year, I’ve been making this cozy variation lately and loving the flavor-packed combo of spices, nuts, bananas, and dried fruit.

I was craving this fluffy, springy, gently-spiced carrot cake the other day, so I tested a grain-free and naturally-sweetened version. It’s pretty tasty, and it also happens to be kosher for Passover!

Now you can make this elevated classic with a gluten-free flour blend (sweet rice, oat, millet, and tapioca flours) or go grain-free with cassava and coconut flours. Either way, this beauty comes together in minutes with one bowl and a spatula, and it bakes up with a pillowy and tender crumb.

Make it in a 9-inch round pan for a single layer cake, or double or triple the recipe for more layers. Or use a square or rectangular pan for sheet cake. Gussy it up with rainbow carrot ribbons, or drizzle with maple or honey on top.

I’ve linked to my traditional less-sweet cream cheese frosting in the post, as well as a vegan cream cheese frosting recipe that I make with @miyokoscreamery plant-based butter and cream cheese. Or you can go paleo and top it with whipped coconut cream or thick coconut yogurt. Feel free to add any carrot cake mix-ins you like – pineapple, raisins, shredded coconut, or toasted nuts.

While I didn’t grow up in a religious family, I loved putting together this roundup of sweet treats that happen to be kosher for Passover. I don’t know if it’s the pandemic, my age (I’ll be 40 this year!😳) or following such inspiring Jewish foodies (Jewdies?) as @jakecohen, @zenbelly, @whatjewwannaeat, @predominantly_paleo , and @estherandloretta , among others, but I’ve been feeling super nostalgic for Jewish cuisine lately.

Also, I had no idea how complicated the rules of Passover really are! I knew that wheat and yeasted baked goods were strictly verboten, in order to honor the hardship of our people traversing the dessert without time to stop and let their bread rise. But I didn’t realize that certain groups observe stricter rules, avoiding all foods that even *look* like grains, such as beans, legumes, and even cardamom!

I even asked you all in my stories to weigh in on the heated debate about baking soda and baking powder. Apparently they are *technically* kosher for Passover according to the letter of the law, even though I and many others always thought they were to be avoided.
